The 78-piece starter kit is a trap. Our honest beginner list has four items - tipless piping bags, two gel colours, a scribe you can improvise and cutters that hold their shape - and it comes in under £25 ($30). Why each earns its place, and what can wait.
Piping is a motor skill, not a talent, and it comes in a fixed order: lines, then dots, then outlines, then lettering. Here is the four-rung practice ladder we recommend, a practice sheet you can draw in five minutes, and the pass marks that tell you when to move up a rung.
Outline, wait, flood, shake flat. The full step-by-step for flooding a biscuit with royal icing - how long each stage actually takes, how to flood bigger shapes without seams, and the wet-on-wet dots-and-hearts trick that looks far harder than it is.
Stiff, piping, flood - three consistencies, one bowl of icing. Here is how to hit each one by counting seconds instead of guessing.
